Tender chicken fillets are stuffed with a delicious spinach and cheese filling, coated in seasoned breadcrumbs, and fried until golden and crunchy. The dish is then finished with a rich, creamy garlic sauce loaded with mushrooms, bell peppers, and melted cheese, making every bite irresistibly indulgent.

Polo Chicken Recipe
Ingredients:
For Chicken:
- 2 chicken fillets (300 gms Chicken)
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp mix herb
For Filling:
- 1 tbsp Butter
- 1 cup Spinach
- 1/4 tsp salt
- 1/4 tsp pepper
- Half cup water
- Half cup cheese(I took mozzarella and cheddar mix)
For Sauce:
- 2 tbsp butter
- 2 garlic
- 3 tbsp mushrooms
- 3 tbsp bell pepper
- 1 pack thick cream (160 ml)
- 1 tsp black pepper
- 1/4 tsp salt
- 1 tsp garlic powder
- 1 tbsp soy sauce
- 1 tbsp hot sauce
- 1 tsp mustard
- 1 tsp chicken powder or 1 chicken cube
- 1 cheese slice
For Coating:
- 2 eggs + mix with 1 tbsp water
- Bread crumbs (add, half tsp of salt, pepper, garlic powder, oregano)
Method:
Step 1: Prepare and Season the Chicken
1. Wash and pat dry the chicken fillets. If the fillets are thick, carefully slice them horizontally to create a pocket for the filling without cutting all the way through. Alternatively, butterfly the fillets and gently flatten them with a meat mallet.
2. In a small bowl, combine 1 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon garlic powder, and ½ teaspoon mixed herbs.
3. Rub this seasoning mixture evenly over both sides of the chicken fillets and inside the pocket. Set aside for 10–15 minutes to allow the flavors to absorb.
Step 2: Prepare the Spinach and Cheese Filling
1. Heat 1 tablespoon butter in a pan over medium heat.
2. Add the spinach and cook for 1–2 minutes until it begins to wilt.
3. Season with ¼ teaspoon salt and ¼ teaspoon black pepper.
4. Pour in ½ cup water and cook until the spinach softens completely and most of the liquid evaporates.
5. Remove the pan from the heat and let the spinach cool slightly.
6. Mix in ½ cup grated mozzarella and cheddar cheese. Stir until the cheese is evenly distributed.
Step 3: Stuff and Coat the Chicken
1. Fill each chicken fillet with the prepared spinach and cheese mixture. Do not overfill, as the stuffing may leak during cooking.
2. Secure the edges with toothpicks if needed.
3. In one bowl, whisk together 2 eggs and 1 tablespoon water.
4. In another bowl, prepare the breadcrumbs by mixing them with ½ teaspoon each of salt, black pepper, garlic powder, and oregano.
5. Dip each stuffed chicken fillet into the egg mixture, ensuring it is fully coated, then roll it in the seasoned breadcrumbs. For an extra crispy coating, repeat the egg and breadcrumb coating once more.
Step 4: Cook the Chicken
1. Heat enough oil in a frying pan over medium heat for shallow frying.
2. Fry the coated chicken fillets for 4–5 minutes on each side, or until golden brown and crispy.
3. Transfer the chicken to a baking tray and bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the chicken is cooked through. (Alternatively, cover the pan and cook on low heat for a few extra minutes if you do not wish to bake.)
Step 5: Make the Creamy Sauce
1. In a separate pan, melt 2 tablespoons butter over medium heat.
2. Add the chopped garlic and sauté for about 30 seconds until fragrant.
3. Add the mushrooms and bell peppers and cook for 2–3 minutes until slightly softened.
4. Stir in the thick cream and cook on low heat.
5. Add 1 teaspoon black pepper, ¼ teaspoon salt, 1 teaspoon garlic powder, 1 tablespoon soy sauce, 1 tablespoon hot sauce, 1 teaspoon mustard, and 1 teaspoon chicken powder (or 1 crumbled chicken cube). Mix well.
6. Add the cheese slice and stir continuously until it melts completely into the sauce.
7. Simmer the sauce for 2–3 minutes until smooth and slightly thickened.
Step 6: Assemble and Serve
1. Remove the toothpicks from the cooked chicken fillets, if used.
2. Place the crispy stuffed chicken on a serving plate and generously spoon the warm creamy sauce over the top.
3. Serve hot with mashed potatoes, buttered vegetables, fries, or steamed rice for a complete meal.
