Here’s how you can recreate this fiery favourite at home using simple kitchen staples.

What You Will Need To Make Chicken Karampodi

  • 250 grams boneless chicken (cut into small pieces)
  • 10–15 dried red chillies (adjust to taste)
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 8–10 garlic cloves
  • 2 sprigs curry leaves
  • ¼ teaspoon turmeric
  • ½ teaspoon garam masala
  • Salt to taste
  • Oil for frying

How To Make Chicken Karampodi

Step 1- Prep And Cook The Chicken: Start by washing the chicken pieces thoroughly. Add a pinch of turmeric and salt, then cook them until all the moisture evaporates. This step ensures the chicken is well-seasoned and ready for frying.

Step 2- Fry Till Crisp: Heat oil in a pan and fry the cooked chicken pieces until they turn golden brown and crispy. Once done, remove and set aside. This gives the dish its signature texture.

Step 3 -Make The Spice Powder: In the same pan, dry roast coriander seeds, cumin seeds, and dried red chillies until aromatic. Add garlic cloves and curry leaves, and roast briefly. Let the mixture cool, then grind it into a coarse powder.

Step 4- Bring It All Together: Add the fried chicken pieces to the ground spice mix and pulse lightly—don’t over-grind; you want some texture. Transfer this mixture back to the pan and sauté on low heat for a couple of minutes. Finish with a sprinkle of garam masala.
